Pineapple Chicken Curry

Prep time: 20 minutes | Cook time: 40 minutes | Servings: 6

Ingredients:

1-1/2 lbs. chicken breast, cut into strips

3 cups coconut milk

3 tablespoons red curry paste

3 tablespoons sugar

1/2 red bell pepper, chopped

3 tablespoons yellow onion, chopped

1 cup pineapple, chopped

2 tablespoons fish sauce

Steamed rice, for serving

Instructions:

1. In a medium saucepan or wok, combine the curry paste and 1 cup of coconut milk. Bring to medium heat, stirring constantly. Add the remaining coconut milk, chicken, fish sauce, and sugar. Simmer for 15 minutes.

2. Add the onion and peppers to the pan and cook an additional 15 minutes. Remove from heat, add pineapple and serve with steamed rice.
